Gond Katira is a natural gum that is obtained from the hardened sap of two sub-Saharan species of Acacia tree – Acacia Senegal and Acacia Seyal. It grows all over Africa and in the Indian sub-continent. Iran is the largest producer of these yellowish translucent crystals.
Gond Katira is an odourless and tasteless substance that takes the flavour of the dish/drink it is added to.
Gond Katira works as a stabilizer, texture additive, and emulsifier. It is used in beverages like lemonade, juices, and milkshakes. You can also add to desserts like kulfi and ice creams.
